Make sure Adobe Illustrator is not running. Double-click the disk image to mount it and proceed with the installer found inside.
NOTE: On Mojave and Catalina macOS's, the installer generates a 'malicious software' message. Close the message and go to 'System Preferences > Security & Privacy > General. Enable 'App Store and identified developers'. Click 'Open Anyway'. You will again see the 'malicious software' message, but this time a 'grayed out' open button will be in the message.
